Pasta with kale
My wife made this dish for us last week. She wondered why I was taking a photograph of her dinner. I told her it wasn't for evidence, but because it was so good! It is also an excellent example of using fresh winter greens available at the market within your favorite dishes. Really fresh greens are not only nutritious, they taste great.

INGREDIENTS:

    * 1 bunch Kale, washed and chopped in strips (chiffonade)
    * 2 tbs. Olive Oil
    * 3-6 gloves Garlic, sliced
    * 4 strips bacon
    * Angel Hair pasta
    * Parmesan cheese

Cook pasta in a large pot of salted, boiling water. In a large skillet, fry bacon until crispy. Remove and crumble. Add tbs. olive oil to pan and add sliced garlic; saute for a minute or two. Add kale and cook until it wilts, 5 minutes or so. Add bacon and mix.

Add drained pasta to skillet and mix all together. Top with Parmesan cheese.
