Huevos Rancheros (WAVE-ohs ran-CHAIR-ohs)

Many people are not aware of the difference between large hatchery eggs (what's in the standard grocery) and those from your small farm. Simply put, truly free ranging chicken eggs have a deeper yellow yolk and a more distinct eggy flavor. Eggs from hens that have not been fed pesticides, antibiotics, growth hormones, and such taste better and obviously are healthier. These are available at your farmers market every week.

While eggs are used in many recipes, here is a Texas favorite that continues to be a mainstay of breakfast. Texan tourists were asking for it so much, it is now a really popular dish throughout Mexico.

INGREDIENTS:

    * 8 large yard eggs
    * 8 corn tortillas
    * 2 tablespoons chopped fresh, green onions
    * 1/2 cup Oil
    * 1/4 cup butter, divided
    * 1/2 cup shredded cheddar cheese
    * Ol' Buffs Gourmet Salsa

In a large skillet, cook each tortilla in hot oil about one or two minutes until it is hot but not crisp. Drain the tortillas and wrap in foil and keep them warm in oven while the rest is being prepared.

Fry each of the eggs in butter until they are the desired doneness. Season with salt and pepper. Place each egg on top of a tortilla and garnish with cheese, green onions and about two tablespoons of the salsa. Serve hot.

Can be made a day ahead. Serves six.
