Strawberry Salad

 With fresh strawberries just coming to market, this is probably not a good time for a strawberry recipe since the strawberries will probably be eaten before you get home.

Just in case, here is a great recipe your family will enjoy that not only tastes great but is healthy and nutritious.

    * 1 bunch of fresh romaine lettuce (washed, tough ends removed, coarsely cut). Romaine is available at the market also, or substitute with your favorite green.
    * There are so many to choose from! 1 pint fresh strawberries (washed, stemmed & halved)
    * 1/2 medium red onion
    * sugared almonds, below

    * Sugared Almonds:
    * 1/2 cup slivered almonds
    * 2 tablespoons butter
    * 1/3 cup granulated sugar

    * Dressing:
    * 3/4 cup light mayonnaise
    * 1/4 cup milk
    * 2 tbsp poppy seeds
    * 2 tbsp raspberry vinegar
    * 1/3 cup granulated sugar

      PREPARATION:

Sugared Almonds: In a saucepan over medium heat, melt 2 tablespoons butter; stir in almonds and 1/3 cup sugar. Sauté until golden brown. In salad bowl combine lettuce, strawberries, onion, and the sugared almonds. Mix dressing ingredients together in a small mixing bowl and then toss with salad. Optionally, add mandarin orange segments as shown in the photo.

      Chill briefly and serve.
