Glazed (or Candied) Carrots
Carrots are an excellent source of antioxidant compounds, and the richest vegetable source of the pro-vitamin A carotenes. Carrots' antioxidant compounds help protect against cardiovascular disease and cancer and also promote good vision, especially night vision.Locally grown carrots are now in season which means they are the freshest and most flavorful now.
Here is a recipe that kids of all ages will love. It's quick and easy.
Ingredients:
* 1 lb of fresh carrots, cut into 2 inch sticks
* salt
* 2 tablespoons butter or margarine
* 2 tablespoons brown sugar
* 1/4 teaspoon ground nutmeg
* water
Preparation:
1. In a medium saucepan over medium heat, add carrots and just enough water to cover them with 1/4 tsp. salt.
2. Bring to a boil.
3. Cover, then cook carrots for 15 minutes or until the carrots are tender-crisp; drain well.
4. Return the carrots to the saucepan.
5. Mix in the butter or margarine, the sugar, 1/4 tsp. salt
6. and the nutmeg.
7. Return the mixture to the heat and cook over low heat, stirring constantly, until the carrots are glazed.
8. Transfer glazed carrots to a warmed bowl and serve.
